Chickpea & Spinach Curry

1. Heat olive oil in a pan and sauté chopped tomato until soft
2. Add curry spices such as cumin, turmeric, and garam masala
3. Stir in drained chickpeas and cook for 2–3 minute
4. Add water to cover and simmer for 15 minutes
5. Add spinach and cook until wilted
6. Season with salt and pepper
7. Serve warm with rice or flatbread

150 g chickpeas; 50 g spinach; 1 small tomato; 1 tbsp olive oil; spices
