Lentil Soup

Ingredients
150 g lentils; 100 g carrot; 2 onions; 1 l water; 1 tbsp olive oil; salt; pepper
Instructions
- 1. Rinse lentils thoroughly under running water
2. Chop onion and carrot into small pieces
3. Heat olive oil in a pot and sauté onion until soft
4. Add carrot and cook for 2–3 minutes
5. Add lentils and pour in water
6. Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils are tender
7. Season with salt and pepper to taste
8. Optionally blend part of the soup for a creamier texture. Serve warm
