Shrimp Fried Rice

Ingredients
100 g shrimp; 150 g rice; 50 g peas; 1 tbsp soy sauce; 1 egg; 1 tbsp oil
Instructions
- 1. Cook rice ahead of time and let it cool
2. Heat oil in a wok or large pan
3. Add shrimp and cook for 2–3 minutes until pink and opaque
4. Push shrimp to one side and crack an egg into the pan, scrambling until just set
5. Add peas and stir-fry for 1–2 minutes
6. Add the cooked rice and mix well
7. Pour soy sauce over and stir until evenly coated
8. Serve hot, optionally garnished with green onions
