Sweet Corn Fritters

Ingredients
100 g sweet corn; 50 g flour; 1 egg; 1 tbsp olive oil; salt
Instructions
- 1. In a bowl, mix corn, flour, egg, and a pinch of salt until combined
2. Heat oil in a skillet over medium heat
3. Drop spoonfuls of batter into the pan
4. Flatten slightly with a spatula
5. Cook for 2–3 minutes on each side until golden and crispy
6. Drain on paper towels and serve warm, optionally with yogurt or chili dip
