Vegan Curry Lentil Soup

1. Rinse lentils thoroughly under cold water
2. Heat olive oil in a pot and sauté chopped carrot until softened
3. Add diced tomato and cook until it breaks down into a sauce
4. Stir in curry powder, cumin, and salt
5. Add lentils and enough water to cover
6. Simmer for 20–25 minutes, stirring occasionally
7. Pour in coconut milk and cook for another 5 minutes
8. Taste and adjust seasoning. Serve hot with bread or rice

150 g lentils; 1 small tomato; 1 carrot; 1 tbsp coconut milk; spices
